Turmeric Poached Pears

soft aromatic poached pears in an aromatic white wine and turmeric sauce

  • 4 pears not to soft
  • 500 ml white wine
  • 150 ml white port wine
  • 2 tsp turmeric powder
  • 120 ml maple syrup
  • 1 cinnamon stick
  • 3 cardamom pods
  • juice of 1 lemon
  • black pepper to taste
  • greek yogurt or ice cream to serve


  1. Peal the pears, leaving stem intact.

  2. In a small pan, place pears, both wines, syrup and spices. Bring to a boil. If needed, add some water to cover up to 1/2 of the pears.

  3. Reduce to minimum heat. Cover the pan (a cartouche may be useful to prevent liquid from fast evaporation). Leave to cook for 15-20 min. Test with a fork if pears are ready.

  4. Remove pears. Continue to reduce sauce until it thickens.

  5. Serve pears with yogurt or ice cream and the remaing sauce. Decorate to taste and enjoy.
